Hemlock parsley has white flower heads that are smaller but similar in shape to those of cow parsnip. Its slender, somewhat fleshy stem and finely dissected leaves also distinguish this medium-sized herb. Hemlock parsley grows in meadows and along beaches.
Food: People peel the young stems of hemlock parsley and eat them raw. They are palatable from late May into June.
Medicine: Hemlock parsley root can be used in a hot poultice to relieve swelling.
